Bere Bannocks

250g beremeal
250g plain flour
2 tsp Bicarbonate of soda
1 tsp Cream of Tartar
Pinch of salt

2tbsp of Natural yoghurt made up to 400ml with milk ~ beat in one egg,
and 2 tablespoons of sunflower/or rapeseed oil and add to dry ingredients

Mix to a soft dough – handle with bere meal on flat surface –
shape to desired size

Dust the hot girdle with flour and bake the bannock for a few minutes
on each side until risen – I find 4 minutes sufficient

If you want a perfectly soft bannock ~ wrap it in a kitchen roll and then
a towel. So that steam doesn’t escape during the cooling process

Sift dry ingredients

Above is enough to make 4 or 5 bannocks
